Easy Lactation Cookies

Breastfeeding calls for all the healthy snacks. This is my personal favorite to fuel the long nursing sessions. These cookies and buttery, chocolatey, and filled with good fats!

Okay, so maybe these aren’t “real” lactation cookies, but they’re a take on my favorite simple, healthy cookies. I know there’s certain foods that supposedly increase milk supply. And while these do have flax seed in them, I’ve really found just nourishing food, hydration, skin to skin, and resting when needed to be key for breastmilk. As my dad always says about milk cows, “You either want her eating or laying down.” I take that to heart in my breastfeeding journeys.

Anyway. These are easy and delicious. Great for those feeding babies or really anyone! Since I have to melt the butter anyway, I like to brown the butter. But definitely not a requirement. It just makes it more delicious. Sometimes I ad coarse salt on top. I have subbed the maple syrup for honey and it worked (tasted really good too), they just spread more and browned more readily. I go really by what feels right after measuring the butter and maple syrup. So if you feel like it needs to be thicker or have more chocolate chips or less vanilla, you do you, boo.

These are great warm, amazing cooled, and out of this world frozen. Don’t mind me sneaking into the freezer for snacks while holding a feeding babe.

Easy Lactation Cookies

Ingredients:

  • 1/2 cup butter, melted (browned butter is my preference)

  • 1/2 cup maple syrup

  • 1 tablespoon vanilla

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1/2 cup ground flax seed

  • 5-6 cups almond flour

  • 2 cups chocolate chips

Instructions:

In a large bowl, mix together the butter, maple syrup, and vanilla. Stir in the salt, baking soda, and flax seed. Mix in the almond flour until well combined and the dough forms. Add in the chocolate chips and stir to combine.

Preheat oven to 350. Scoop 1.5-2 tablespoon amounts of the dough onto a baking sheet. Bake for 8-10 minutes or until the edges are brown. Let cool for a few minutes on the baking sheet before moving them to a cooling rack. Enjoy!
