Gluten Free Dutch Baby

Sweet, simple, easy. Free range eggs, raw milk, pure vanilla, local maple syrup, browned butter. This is why we’ve rapidly grown to love a Dutch baby as a special breakfast!

I had heard the hype, but hadn’t tried a Dutch baby until recently. The idea of not having to flip multiple pancakes won me over, but the simple, good-for-you ingredients kept me.

We’re a gluten free house which sometimes mean that the normal “gluten” stuff isn’t as amazing. Thankfully Dutch babies are supposed to be dense! And after tweaking a few recipes I had found, we settled on this and it’s pretty darn good. Particularly the crunchy edges that are baked in brown butter!

You can use your blender to whip these up or a hand mixer! I have an old crank hand mixer I especially love that works great for these.

For the butter, I just pop it in my cast iron pan that I bake it in while the oven is preheating. Before it gets too hot, I pour out and measure out the amount I need for the batter. I leave the rest in the pan and pop the pan back in the oven. It browns the butter which makes the Dutch baby extra amazing.

Top this with fresh berries, homemade whipped, or maple syrup!

Gluten Free Dutch Baby

Ingredients:

  • 6 tablespoons butter

  • 6 eggs

  • 1 cup milk

  • 1 tablespoon pure vanilla

  • 3 tablespoons maple syrup

  • 1 cup gluten free flour blend

Instructions:

Turn oven on to 425 degrees. Place butter in a 10 inch cast iron or other oven safe skillet. Place skillet in the oven while the oven preheats.

In a bowl or blender, blend together the eggs, milk, vanilla, maple syrup, and 2 tablespoons of the butter that melted in the skillet. (Leave the rest of the butter in the skillet and put back in the oven to brown.) Blen in the flour assuring there are no clumps.

When the oven is preheated, pour the batter into the skillet with the butter. Place the skillet back into the oven for 20 minutes. The Dutch baby will be puffy when you take it out of the oven, but it’ll sink down within a minute or so. Slice and serve with your favorite topping! Enjoy!
