Greek Yogurt Pizza crust

This curst is super easy yet really delicious. It’s the only one I make anymore!

Years ago I stumbled across this recipe. I don’t even know where I found it, but when I transitioned to gluten free, I brought it with me. Initially I just subbed out gluten free four for the self rising flour, but it didn’t quite have the desired outcome I was looking for. After years of tweaking, I think I have this about nailed for gluten free. Adding in tapioca starch gave the crust a nice chewy and springy texture. And unlike so many gluten free pizza crusts, this isn’t resembling the texture of a cracker. It has a little fluff to it!

This holds up well to a hefty amount of toppings and works for making into garlic bread too! This would be a perfect meal to get the kids to pitch in on this weekend!

Greek yogurt pizza Crust

Makes 1 large pizza crust

Ingredients

  • 2 cups plain greek yogurt

  • 2 teaspoon baking powder

  • 1/2 teaspoon xanthan gum

  • 1 1/2 teaspoon garlic powder

  • 2 cups gluten free flour blend

  • 2 1/2 cups tapioca flour/starch

  • more flour or starch as needed

First, in a large bowl, stir in the baking powder, xanthan gum, and garlic powder into the greek yogurt. Add in the flour and starch. Stir with a spatula until you can’t keep stirring it. Dump dough out on to a clean surface. Kneed the dough adding more starch or flour until the dough comes together and is no longer sticky. Place back in the bowl and let the dough rest for half an hour before baking.

Preheat the oven to 425 degrees fahrenheit. Lay some parchment paper down on a pan or pizza stone. Dump the dough out on to the parchment paper. With hands greased with olive oil, start pressing the dough out on the pan. Press it out until about the size of a large pizza. Press the edges of the dough up a bit to create a ridge for the crust.

Prebake the pizza crust for 15 to 18 minutes in the preheated oven or until it is just turning golden brown and looking a bit dry. Add your toppings. Crank oven up to 500 degrees and bake pizza for about 6 minutes. Rotate the pizza and bake for another 6 or so minutes or until the cheese is browned. Enjoy!


To make this with regular flour, simply use equal parts greek yogurt and self rising flour. Follow the rest of the instructions as written.
