Healthy Homemade Fudgesicle

There are somethings that scream childhood and one of those is popsicles in the summer. I loved all popsicles as a kid, and I mean who wouldn’t, they’re delicious. But the ones that were a special treat for me were fudgesicles. I’m sure part of that is my mild obsession with chocolate, but also there were a little more rare for us to have. Nonetheless, they’re delicious.

Now that I’m a mom, I’m not a huge fan of buying a bunch of highly processed foods for my family. So it’s made me troubleshoot how to make sure my kid gets all the joys of life and summer yet still have nutrient dense foods. So I decided to make fudgesicles!

These are made with really high quality ingredients yet still taste so chocolaty and delicious. Think whole milk, honey, egg yolks for ingredients. Basically, you make healthy fudge and freeze it! You can feel really good about giving these to your kids.

If the honey flavor is too strong for you, swap out maple syrup for the honey. But a bonus of using local honey is that it can help with allergies. What a delicious way to fight off the siffles! If you don’t have popsicle forms, you can use paper dixie cups and wood popsicle sticks! Just tear the cup off once frozen and enjoy!

Helathy Homemade Fudgesicles

Makes 8 popsicles

Ingredients

  • 2 cups whole milk

  • 1/2 cup honey

  • 1/4 teaspoon salt

  • 1 tablespoon arrowroot starch

  • 5 tablespoons cocoa powder

  • 2 egg yolks

  • 1 tablespoon butter

  • 1 teaspoon vanilla

Instructions

Heat 1 1/2 cups of milk and honey in a small sauce pan over medium low heat. Whisk frequently. Heat until bubbles just start to form, about 3-5 minutes.

Meanwhile, In a heatproof bowl, whisk the remaining milk, salt, arrowroot starch, cocoa powder, and egg yolks. Whisk until smooth.

When the milk and honey mixture is done, slowly pour into the heatproof bowl with the other ingredients whisking the entire time. Continue to whisk the fudge until it is well incorporated and there are no lumps. Then add the butter and vanilla. Whisk until the butter is melted and all is mixed well.

Pour the fudge into silicone popsicle mold or dixie cups. Put the popsicle sticks in. Freeze for about 6 hours or until frozen solid. Unmold the fudgesicles and enjoy!
