Simple Grilled PIzza

Need a pizza that is fresh, simple, and delicious? Look no further!

What is it about grilling pizza that is so life changing?? It doesn’t heat up the house and you can put all the flavors of summer in to it. It’s fresh and light while somehow still being hearty and comforting. LIFE CHANGING.

This is for a simple margherita pizza, but customize it however you like with whatever toppings you like! I love adding meat to my pizza for a protein boost! Pesto is a fun sauce too! Make it your own!

Simple Grilled PIzza

Ingredients:

  • Enough pizza dough for 1 large pizza (I like my Greek Yogurt Pizza Crust, but you can use whatever you like. Sourdough would be great, I’m sure!)

  • 1 tablespoon ghee or butter

  • 4 cups cherry tomatoes

  • 3 garlic cloves, minced

  • 1 tablespoon honey

  • pinch of red pepper flakes to taste

  • salt and pepper to taste

  • 1 tablespoon balsamic vinegar

  • 2 ish cups fresh mozzarella, sliced

  • 1/2 cup fresh basil leaves

Instructions:

Preheat your grill to medium heat (around 350-375 degrees). Shape your dough into a circle. Once the grill is heated, either put the dough directly on clean grill grates or put it on parchment paper then on the grill. Cook for about 20 minutes o until the dough starts looking dry and semi done.

While the dough cooks, make your sauce. Put the ghee, tomatoes, garlic, honey, red pepper flakes, salt and pepper into a large skillet. Cook over medium heat until the cherry tomatoes burst. Continue cooking for 10-15 minutes or until the sauce thickens. Stir in the balsamic vinegar. Turn off the heat and set aside until the crust is done.

Spread the sauce on the par cooked crust. Arrange slices of mozzarella over the pizza. Place back on the grill for another 10 minutes or until the mozzarella is melted and the crust is fully done.

Remove from grill and top with the fresh basil. Slice and enjoy!
