Strawberry Syrup

A childhood classic WITHOUT the red dye 40!

Confession time: as a child, I refused to drink plain milk (or “white milk” as I called it). I ONLY drank “pink bunny milk,” or more accurately, strawberry milk. My guess is I breastfed a long time and went from the liquid gold to pasteurized skim or 2% (hello 90s anti fat household). It was not delicious. So to make it better, I required sugar and red dye 40.

I no longer drink pink bunny milk because I have the full fat raw goodness. BUT! Strawberry milk has been highly requested. So I gave it a whirl!

Two simple ingredients make this strawberry syrup! It doesn’t really turn your milk pink thanks to no food dyes, but you could probably add in a natural dye if that’s something you want. In all honesty, it’s not needed! The sweet strawberry flavor shines through without it!

Another bonus to this recipes: you have to strain out the solids which leaves you with a naturally sweetened strawberry spread! Keep it in your fridge for a week or so to slather on some toast or biscuits! So good!

Strawberry Syrup

Ingredients:

  • 3-4 cups frozen or fresh strawberries (I used a 1 pound bag of frozen sliced strawberries)

  • 1 cup maple syrup

Instructions:

In a medium sauce pan, place the strawberries and the maple syrup. Bring to a boil. Be careful not to boil over! Once the mixture is boiling, reduce heat to low and continue to simmer for about 15 minutes or until the liquid is quite red and the strawberries are falling apart.

Over a bowl, place a fine mesh sieve. Pour the strawberry through the sieve. Mash the berries in the sieve to get most of the liquid out until the berries become a paste or spread. You can reserve the berries to spread on toast or jam. Place the berry spread in a jar with a lid, and store in the fridge.

Pour the berry syrup into a jar and put a lid on it. Put the syrup in the fridge until cold. This will probably take several hours.

Once the syrup is cooled, mix your desired amount with milk to make strawberry milk! Start with a tablespoon and taste from there how sweet you want it! You can also serve it over ice cream or use it in the viral matcha strawberry iced latte! However you use it, enjoy!
