Raw Eggnog

If you’re not an eggnog believer, I feel for you. Neither was I. Then I made this recipe last year. Wowza. It tastes like melted cinnamon ice cream but without all the junk in it. In fact, this may be one of the most healthy things you consume over the holidays. Does it cancel out 12 cookies? I dunno, but it’s worth a shot.

Seriously, this is packed with quality ingredients. The raw milk delivers probiotics and digestive enzymes. As we’ve talked before, raw milk also has all the vitamins and minerals intact that are otherwise destroyed in the pasteurization process. The egg yolks are an excellent source of choline which supports brain functions. They also contain fat soluble vitamins! Maple syrup as a sweetener provides minerals that you wouldn’t find in white sugar. Plus it gives the nog a subtle maple flavor.

With the milk, cream, and egg yolks being raw in this, I do highly advise you source the ingredients well. Our milk is tested to ensure safety, and our animals are well fed and cared for. Source your eggs from ideally someone you know who cares well for their chickens and lets them free range. I wouldn’t make this with eggs from the grocery store personally. If you do, I advise seeking pasteurized egg yolks if you can find them.

Here’s a personal hack for the milk and cream if you’re using our milk: don’t shake your jug to mix up the cream! Instead, just pour 4 cups of it. You’ll get more of the cream than you would otherwise and you don’t have to go to the trouble of skimming it off the top of your jug. It may not be a full cup, but it works. If you do want to measure the cream separately from the milk, be sure to use the turkey baster hack!

You can spike this with a bit of rum if desired! Or add it to your morning coffee! Either way or on it’s own, it’s amazing!

raw eggnog

Ingredients:

  • 1 cup of raw cream (see hack above)

  • 3 cups of raw milk

  • 6 egg yolks

  • 1/2 cup of maple syrup

  • 1 tablespoon vanilla

  • 1 tablespoon cinnamon

  • 1 teaspoon nutmeg

  • 1/4 teaspoon ground cloves

Instructions:

Put all the ingredients in a blender. Process for 4 minutes. Pour into another container to store and serve. It’ll be frothy, but that’s one of the best parts. Enjoy! It only keeps for a couple days, but will keep a little longer if you add booze! It’s best enjoyed the day it’s made!
