Sweetned Condensed Milk

I tested out 4 different recipes for sweetened condensed milk. I really wanted maple syrup to work, but it just didn’t get thick enough. I loved the idea of brown sugar too, but it wasn’t quite right either. Just sugar and milk was close, but not there. Finally, sugar, milk, and baking soda was the winner.

This is great for baked goods or coffee creamer or whatever you need sweetened condensed milk for!
Sweetened Condensed Milk
Ingredients:
2 cups milk
1/2 cup sugar
1/4 teaspoon baking soda
Instructions:
Place milk and sugar in a small sauce pan. Bring to a low simmer. Continue to simmer for about and hour. If a film form on the mixture, skim it off. Stirring it in could cause the condensed milk to be grainy.
After it has simmered an hour and has probably reduced by half, whisk in the baking soda. It may not yet be as thick as normal, but it will thicken as it cools. Remove from heat. Place in a glass jar with a lid. Put in the fridge. Use it as directed in recipes. This will yield a bit over a cup. It will keep 2 weeks in the fridge.
