Breakfast Ice Cream
Is this for real ice cream? No. But my toddler daughter calls it ice cream and asks for it regularly for breakfast. So we call it breakfast ice cream in our house!
Probably why she loves it is because while pregnant with her brother, I was very sick in the first trimester. Yogurt was one of the only things I kept down and I craved it with chocolate and peanut butter. So this was on repeat until I could stomach other foods!
This is crazy simple, but we love it in our house. You can adjust and add as desired! When I have bananas, we love sliced bananas in it too! Shopped salted peanuts? You have our attention! For myself, I often swap the maple syrup and cocoa powder for chocolate protein powder!
We also love this as a fruit dip!
Breakfast Ice Cream
Ingredients:
1 cup plain yogurt
1 tablespoon maple syrup
1 teaspoon cocoa powder
pinch of good sea salt
1-2 tablespoons peanut butter
chocolate chips (optional, but are they?)
Instructions:
In a small bowl whisk the yogurt, maple syrup, cocoa, and salt together. Drizzle the peanut butter on top and stir in not quite fully. Sprinkle with chocolate chips and enjoy!
